Tea House · Ikoyi, Lagos

Slow water, open leaves

Bought by the season

Green teas in spring, black teas after the summer rains, oolongs when the roasters are ready. We buy small lots and sell them by weight.

Hot, but not boiling

Green tea likes water just off the boil; black tea likes it rolling. Every tin carries the temperature and the time.

Something to pour from

Clay, cast iron or glass. A pot that holds the heat and lets the leaves open.

Sit for a minute

Then pour again. Good leaf gives two, three, sometimes six cups.

Brewing

Four things to get right

  1. Weigh

Three grammes to a 250ml cup. A level teaspoon is about right for most leaves.

  2. Heat

Green and white teas at 75 to 80°C; oolong at 90°C; black and herbal at the boil.

  3. Time

Two minutes for green, three for oolong, four for black. Taste, then adjust.

  4. Pour again

Use the same leaves for a second and third cup, a little longer each time.

Questions

How long does loose tea keep?

Green and white teas are best within six months, black and oolong within a year. Keep the tin closed and away from light.

Do you have tea bags?

No. Only loose leaf, so the leaves have room to open. An infuser basket makes it as easy as a bag.

Can I taste before I buy?

Yes. Any tea on the shelf can be brewed for you at the counter.
