Palm wine
Tapped this morning
What palm wine is, how it changes through the day, and the rules we keep about who drinks it.
The day of a jug
From palm to calabash
The climb
The tapper climbs each palm and collects the sap from the night before.
The yard
It arrives sealed and goes into the cold room. Cold slows it down.
Fresh
Sweet and light. Most of what we pour is this.
Matured
Left to work, it becomes drier and stronger. We label it clearly.
The rules we keep
Adults over 18 only
We ask for ID from anyone who looks under 25, at the gate and on delivery.
Always with food
We do not sell palm wine to a table that has not ordered food.
Know when to stop
We will stop serving anyone who has had enough, and call a taxi if needed.
